Where would an Autumn issue be without Apples and Pears?

Naturally they are abundant at this time of year. The sweeter apples are still crisp to crunch and filled with juice, the cooking varieties sharp and tangy - just the way I like them! Pears too are at their best and while we enjoy them just as they are raw or sliced along with a little cheese, I love cooking with them just as much.
